After graduating from New England Culinary Institute in his hometown of Essex, Vermont, Matt Birong started his career as an intern at the prestigious Rainbow Room in New York City. In 1997 he made the move right into Boston’s South End where he served it up at Metropolis Café and at the tender age of 22 was named Sous Chef at Aquitaine Boston.
Five years passed, and like so many Vermonters, the Green Mountains beckoned him home. Matt spent the next three years as Executive Chef at The Waiting Room and the following year at Leunig’s, both in Burlington, Vermont. His search for the perfect restaurant and community began, and in 2007, Matt purchased a café called Eat Good Food on the corner of Main and Maple Streets in downtown Vergennes and opened 3 Squares Café.
3 Squares Café, a Vermont restaurant and café, serves up casual and creative cuisine three meals a day, seven days a week. Located in historic downtown Vergennes, Vermont, 3 Squares Café welcomes the entire family into its eclectic atmosphere. Noted for their dedication to cooking from scratch and generous portions for breakfast, lunch and dinner, 3 Squares Café has been pumping nourishment into the heart of the Vergennes community and those who visit for the past five plus years.
Matt Birong’s culinary past, the vibrant character of the café, and the fresh yet hearty creations with locally sourced ingredients have formed a Vermont flavor that is distinctively its own.
